Arrowroot Recipe

Arrowroot Delight

Ingredients

  • 1 large arrowroot
  • ¼ cup groundnuts
  • 1 egg

  • Variation

    The groundnuts can be submitted with soya beans, boiled cassava can be used instead of arrowroots.

    Arrowroot and Beans

    Ingredients

    • ½ kg arrowroots
    • ½ cup butter beans
    • 2 tomatoes
    • ½ tsp curry powder(optional)
    • 2 cup thin coconut milk
    • 1 cup thick coconut milk

    Method

    Peel and slice the arrowroots.

    Pre soak the beans overnight and cook.

    Skin the potatoes and slice them.Put half of the beans into a saucepan and some few tomato slices.

    Arrange the arrowroots on the beans and tomato slices.

    Sprinkle the curry powder and salt.

    Pour the thin coconut milk (it should cover the mixture fully) and put on fire.

    Mix the mixture when ready.

    Put the thick coconut milk into the saucepan, add a little curry powder and stir.

    Place on the fire and keep stirring with a wooden spoon until ready and heavy.

    Serve on a shallow plate, taking care not to break the slices of arrowroots. Pour enough coconut milk onto the mixture.

    Arrowroot Stew

    Ingredients

    • 1 medium arrowroot
    • 1 medium potato
    • 1 small onion
    • 2 tbsp fat
    • 3 cups water

    Method

    Peel and chop the arrowroot and potato into small cubes, keeping them separate.

    Heat the cooking fat in a saucepan and fry the onion until golden brown.

    Add the potato and cook for 10 min.

    Add the arrowroot and water and simmer until the mixture thickens.

    Serve hot with meat and vegetables.

    Boiled Arrowroot

    Ingredients

    • Arrow roots
    • Salt
    • Water

    Method

    Peel the arrowroots and wash them in clean water.

    Boil in water in a sauce pan until tender.

    Serve hot/cold as snack with tea/milk/porridge
