Banana Recipes


Banana Mandazi
Ingredients
  • 1 cup mashed ripe banana (about 500g)
  • ½ cup sugar
  • 3 cups self-rising flour
  • Deep-frying fat
  • 1 egg(optional)
Method

In a large bowl, mix the flour and sugar. Beat in the egg. Add mashed banana and knead to pliable dough. Roll the dough out to about 1cm (pencil) thickness. cut into desired shapes (squares or circles or triangles). Deep fry in hot oil until golden brown. Serve hot or cold.
Banana Doughnut
Ingredients

  • 2 cups mashed ripe banana
  • ½ kg wheat flour
  • 2 teaspoon baking powder
  • 4 tablespoon margarine
  • ¼ cup of sugar
  • 2 eggs
  • Water
  • Deep frying oil
Method

Rub in the margarine into the flour. Add sugar and baking powder. Beat in the eggs. Add the mashed banana and knead well to form a stiff dough, adding water if necessary. Roll out and cut into rings and rounds about ¼ inches thick. Deep fry in hot oil for about 10 minutes.


Banana Fritters
Ingredients

  • 1 cup wheat flour (about 500g)
  • 2 tablespoon sugar
  • 1 tsp baking powder
  • 2 bananas
  • 1 egg
  • ½ cup milk
Method 1

Mix the baking powder and flour in a bowl. Make a well in the center and put the egg in it. Add sugar to the egg and mix until the sugar dissolves.Add milk gradually and mix in flour to form batter. cut the banana into pieces and dipinto the mixture. With a spoon, pick out a piece of banana covered with batter and put in a pan of hot cooking oil and fry until both sides are light brown.

Note: Instead of banana you can use pineapples, boiled sweet potatoes,arrowroot or green maize.

  • ½ cup sugar

Method 2

Preheat the oven to 190°c.Lightly grease and flour a baking sheet or a medium sufuria. In large bowl,cream together the butter and sugar until blended. Beat in the banana, and then beat in the egg one by one until completely mixed. Fold in the flour. Pour in the mixture into prepared tin and bake for 60 minutes or until when a thin wooden skewer inserted in the center comes out clean.

Banana Crisps
Ingredients

  • Raw bananas
  • Deep-frying oil
  • Salt
Method

Peel the raw bananas and wash them in salted water. Slice them into very thin slices and deep-fry them until golden yellow. Drain, cool and pack them in polythene bags.
Curried Meat and Bananas
Ingredients

  • 200g beef
  • 1 onion
  • 250 ml water or stock
  • Salt to taste
  • 1 carrot
  • 1 level teaspoon curry powder
  • 1 oz cooking fat
  • 3 medium-sized unripe bananas
  • 1 rounded teaspoon flour
Method

Wash the meat and cut it into small pieces. Peel, slice and chop the onions. skin and slice the tomato. Wash and chop the pepper. Peel and slice the carrot. melt the fat and fry the onions until light brown Add the meat and seasonings ( curry powder, salt, pepper and flour). fry slowly for about 5-10 minutes. Add the carrots and cook for a furher 3-5 minutes, then add tomatoes and water or stock. Cook slowly for about 30minutes.meanwhile slice the bananas into inch lopng pieces and wash them. Add the bananas to the cooking meat and continuecooking slowly until the meat and the banana are tender. serve hot, with sliced tomatoes and fried green vegetables.
