Vegetables in Coconut
Cabbage in Coconut (Kabichi la Nazi)
Ingredients
- 1 chopped cabbage
- 2 cups water for boiling
- 2 coconuts to give 1 cup FEM and 2 cups SEM
- 1 sliced onion
- 2 whole green chillis (optional)
2 sliced tomatoes
- salt to taste
- 1 teaspoon curry powder
MethodBoil the cabbage in 2 cups of water till tender. Add SEM and other ingredients except FEM. Cook till dry. Add the FEM and cook till dry. Serve hot with rice and meat.
Cassava in Coconut (Muhogo wa Nazi)
Ingredients
- 2 big pieces of cassava
- 2 sliced onions
- 2 whole green peppers
- 1 cup FEM and 3 cups SEM from 2 coconuts
- Salt to taste
Method
Cut cassava into pieces and boil it in water till cooked. Add onion, salt, peppers and SEM. Cover the pot and cook till there is little juice left. Add FEM and cook for2 min more. Serve hot with meat or fish.
Sweet Potatoes in Coconut Milk (Viazi vitamu vya kienyeji vya Nazi)
Ingredients
- 1 kg sweet potatoes (peeled and sliced)
- ½ cup sugar
- 4 cardamon seeds (¼ teaspoon powdered)
- 2 coconuts to give 1 cup of FEM and 3 cups of SEM
Method
Place potatoes with all ingredients, except the 1 cup of FEM , in a pot. Cover and cook on medium heat till nearly dry. Add the 1 cup of FEM. Cook for 1 min. Remove from heat and leave to cool. Serve cold with stewed meat.
Cream Sweet Potatoes and Cowpeas (Viazi vitamu na Mbaazi)
Ingredients
- 2 cups dried peas
- Enough water for cooking
- 4 sweet potatoes
- 200 g butter/margarine
- Salt
- 4 tomatoes for garnishing
Method
Wash and boil the peas in a saucepan till halfcooked. Wash and peel the potatoes and add to the peas. Continue cooking until soft. Drain. Mash them together, adding butter and salt to taste to make a smooth mixture. Serve garnished with sliced tomatoes.
Pumpkin in Coconut (Boga la Nazi)
Ingredients
- 1 kg pumpkin (peeled and sliced)
- 2 cups water for boiling
- 2 coconuts to give 1 cup FEM and 3 cups SEM
- ¼ teaspoon ground cinnamon
- ¼ teaspoon cardamon seeds
- 1½ cups sugar
Method
Boil pumpkin in a pot till nearly cooked. Add SEM, cinnamon, cardamon and sugar. Cook on medium heat till the milk is reduced and then add FEM. Cook till nearly dry. Remove from heat. Leave to cool. Serve with fried fish or meat.
Spinach in Coconut (Mboga ya Mchicha ya Nazi)
Ingredients
- 2 bunches chopped spinach
- Water for boiling (about 2 cups)
- 2 coconuts to give 1 cup FEM and 1 cup SEM
- 1 sliced onion
- 2 whole green chillis
- 2 sliced tomatoes
- Salt to taste
Method
Boil spinach in waterr till tender. Drain. Add SEM and all other ingredients except FEM. When dry, add FEM and cook till dry again. Serve hot with rice and meat.
Yams in Meat (Viazi Vikuu vya Nyama)
Ingredients
- 1 kg meat
- 2 medium-sized yams
- 1 sliced onions
- 1-2 whole green chillis
- 1 large sliced tomato
- Salt to taste
- 1 coconut to give 1 cup FEM and enough SEM to cover
Method
Clean and cut meat in cubes. Boil till cooked. Peel and clean yams. Cut in medium-sized pieces. Place a layer of yams in a cooking pot, cover with meat, onion, chillis, tomato and salt. Add the rest of the yams over this and pour in SEM to cover. Cover wiht lid, cook till almost dry and then add FEM. Cook for 2-3 min. Remove from heat. Serve hot as main dish.
