Review of cassava logs and Sweet potato in coconut milk

Cassava logs



Suitable for breakfast, served with hot cup of tea. It can be accompanied by a stewy beef recipe and vegetables for dinner or served as a snack to guests.

Ingredients

1kg cassava
Salt to taste
Oil for deep frying
1 tsp chili
1 lemon

Method

-Chop cassava into pieces and peel off outer skin
-With a knife, cut off the fibrous center vein and discard
-Submerge cassava in a pot of water with salt and boil until soft. Pierce with a sharp knife to check for readiness.Cassava takes approximately twice as long to cook as potatoes.
-Heat deep frying oil to hot place cassava logs and fry until the top is crispy and brown.
-Sprinkle with chili and squeeze some lemon juice to taste.

Also Sweet potato in coconut milk is served similar to cassava

Ingredients

4 medium size sweet potatoes, peeled and sliced into rounds
5 whole cardamom pods
2 cups coconut milk
1 heaped tbsp dessicated coconut

Method

-Boil sweet potatoes in water until soft. Drain and keep aside
-In a separate pan, dry-fry cardamoms for 1 minute, then pour in the coconut milk. Add boiled sweet potatoes and simmer on ow heat.
-in a flat pan, roast the dessicated coconut until light brown.
-Remove sweet potatoes from heat, serve on a plate and sprinkle dessicated coconut.Serve hot or cold.
