Review of Savoury beef rolls with flavoured vegetable stuffings

Savoury Beef Rolls
This dish is sure to be a show-stopper! It's a perfect party food. That will impress both the taste buds and eyes of your guests and family.
Serve it with Ugali,chapati, rice or potatoes.
For the marinade
11/2 kg beef fillet
5 tdsp oil
traditional salt to taste
1 tsp pepper
2 cloves garlic, crushed
stuffing
4 tomatoes, remove the seeds and slice into thin strips
4 onions, sliced into thin strips
3 green pilipili hoho (pepper), remove seeds and slice into thin
strips
2 bay leaves
1 tsp dry thyme
small bunch dhania, finely chopped
Method
-Slice the meat into flat pieces of 1 inch thickness. Using a kitchen mallet, pound both sides until tender.
-In a large bowl mix together oil, traditional salt, black pepper, and garlic.
-Place the pounded meat into the marinade and mix well. Marinate for at least 4 hours in the refrigerator.
-Pan fry both sides on high heat until golden brown. Lower the heat, cover and cook for 20 minutes. Keep aside, covered
-In the same pan (don't clean it just yet), add the tomatoes, onions, hoho, celery, bay leaves, thyme and dhania. Fry while stirring on high heat until the vegetables are tender but still crispy.
-Spread out one piece of meat and spoon on some vegetables.
-Roll carefully and neatly.
-Lastly, secure the ends with toothpicks.Serve Hot
